Creativity Challenge: Day 5


When life gives you lemons, make lemonade - or in my case, when life gives you a breastfeeding baby who vomits because of your diary consumption, go vegan! So that's just what I did for this little slice of heaven! I was really just looking for some kind of diary free "Birthday Cake" for myself that I could actually enjoy for this most recent Birthday. I haven't eliminated dairy altogether, but I do try to avoid it if at all possible and most desserts contain some kind of dairy product. So enter Pinterest - I was actually having a hard time finding something substantial that was diary free and didn't require you to stand on your head while winking an eye and balancing a glass of water on your foot! (I really gotta hand it to them vegans, boy are your recipes are hard work and costly?!) Well I was searching & searching and finally came across this Peanut Butter Mousse Pie - looked easy enough and believe it or not I had all of the items in my pantry - oh wait - it's "raw" too - I'm in! (This means no baking or cooking for me!) So I got crackin' and I gotta tell you, it's pretty amazing! The only thing I changed was swapping out the walnuts for some almonds - and for whatever reason, I think it would have been awesome to put a teensy weensy bit of espresso powder in the crust (but I can't have that right now either).
Well it definitely quenched my thirst for a sweet treat and it made up for the fact that my Birthday plans got cancelled and our Easter (dinner) was cut short. wah wah
But anyhow, try it - it's good
